Kerala Rose Cookies (Achappam)

Achappam (or 'Rose Cookie') is an iconic festive sweet from Kerala, often made by Christian families for Christmas. The name refers to the special iron mold ('ach' means mold, 'appam' means bread/cake). The batter is rice flour-based, enriched with coconut milk and egg, then deep-fried using the flower mold. The result is a wafer-thin, crispy, lace-like treat that isn't overly sweet but unforgettable with hints of coconut and sesame.

Instructions

1

Whisk the eggs with sugar in a bowl until the sugar dissolves.

Tip: Do not whip to a foam; just mix until homogeneous to avoid excess air bubbles.
2

Add the coconut milk, regular milk, and a pinch of salt. Mix well.

Tip: Coconut milk provides the signature flavor and fat needed for crispiness.
3

Gradually whisk in the rice flour and baking soda until smooth and lump-free. (Stir in sesame seeds now if using).

Tip: You want a batter with the consistency of pancake batter. Too thick, it won't release; too thin, it won't stick.
4

Heat the oil in a deep pan to medium-high. Place the iron mold into the hot oil and let it heat up.

Tip: The iron needs to be hot so the batter clings to it and starts cooking immediately.
5

Lift the hot iron, dip it into the batter (ONLY 3/4 OF THE WAY UP, do not submerge fully!), then immediately place it back into the hot oil.

Tip: If you submerge it completely, the batter locks over the top of the mold and won't release.
6

Hold in the oil and gently shake the handle until the cookie slides off the mold. Fry until golden brown on both sides, then drain on paper towels.

Tip: As soon as it releases, put the iron back in the oil to reheat for the next one.

Recipe FAQ

Why did the batter stick to the mold?
The mold must be heated in the oil before dipping it into the batter. If the iron is cold, the batter bakes onto it.
Why does the batter fall off in the oil?
If the iron is too hot, the batter cooks before it hits the oil. Practice makes perfect!
