Cut the gooseberries (amla) into pieces, remove seeds, and boil until soft in a little water, or steam them. Once soft, blend into a paste.

Dry roast the coriander seeds, cumin, and black pepper in a pan for a few seconds until fragrant, then crush coarsely.

Heat oil in a pot and pop the mustard seeds. Add the finely chopped onion, crushed garlic, and turmeric. Sauté until translucent.

Pour in the water, add the gooseberry pulp, tamarind, salt, and crushed spices. Bring to a boil.
