Wash apple and cut into paper-thin slices or small cubes.

Tip: Thin slices look elegant in the glass and release flavor over a larger surface area.

Dissolve honey in Calvados in a small glass.

Tip: Honey dissolves easier in alcohol than in cold cider.

Fill glasses with ice and layer apple slices in between.

Tip: Layer: ice, apple, ice, apple. Looks spectacular.

Pour honeyed Calvados over the ice.

Tip: Chill the alcohol.

Top with cold cider and stir gently with cinnamon stick.

Tip: Use cinnamon stick as a 'spoon', it flavors meanwhile.

What is Calvados?
It's a French protected designation of origin apple brandy. If unavailable, substitute high-quality apple brandy, though taste will be rawer.
Drink is too strong.
Use more ice and cider, halve the Calvados. It's a cocktail, ratios are adjustable to taste.
