- Can I use dried plums (prunes)?
- Yes, but soak them in warm water beforehand to rehydrate them.
- What can I substitute for cilantro?
- If you have the 'soap gene' or just dislike cilantro, fresh parsley is the safest bet, though the flavor profile will change slightly.
Caramelized Leeks with Plums and Rosemary
Ingredients
Equipment Needed
- Large skillet (preferably non-stick)
- Cutting board
Instructions
Halve the leeks lengthwise and rinse thoroughly to remove any grit between the layers. Slice into thin half-moons. Smash and mince the garlic.
Wash and pit the plums, then slice them into wedges (not too small, or they will disintegrate).
Heat olive oil in a skillet over medium heat. Add the leeks and the rosemary sprig. Sauté until translucent and softened (about 4-5 minutes).
Add the garlic and plum wedges. Continue to cook until the plums release their juices and the edges begin to caramelize.
Deglaze the pan with balsamic vinegar, add salt, and simmer for 1-2 minutes until the liquid becomes syrupy.
Remove from heat, discard the rosemary sprig, and garnish generously with roughly chopped fresh cilantro.
