Originating from Maharashtra, this recipe utilizes poha's quick water absorption: it swells in minutes, becoming moldable, to then become a light, spongy breakfast in the steam.

Rinse the poha under running water in a colander, let drain for 2 minutes, then place in a bowl. Mix in the yogurt and semolina.
Tip: The acidity of the yogurt softens the poha fibers, while the semolina helps provide structure so it doesn't get too mushy.

Add the spices: ginger, garlic, chili, salt, sugar, turmeric, and lemon juice. Mix well. If too dry, add a little water to form a thick batter. Let rest for 10 minutes.
Tip: During resting, the semolina swells.

Preheat the steamer. Just before cooking, stir in the fruit salt (or baking powder).
Tip: It will foam immediately from the acid-base reaction. Don't overmix; just fold it in to keep the bubbles!

Pour onto a greased tray/plate, smooth it out, and steam for 15-20 minutes on high heat.
Tip: Steam 'bakes' the starch and stabilizes the fluffy structure.
