Cut cabbage into finger-wide strips or cubes. Clean and chop other vegetables.

Tip: Remove core as it can be bitter and remains hard.

Fry caraway seeds in oil for a few seconds until fragrant (blooming). Add onion and sauté until translucent.

Tip: Blooming spices intensifies aroma.

Add carrots and celery, sauté together for 2-3 minutes.

Tip: Carotene in carrots is fat-soluble, gives nice color to soup.

Add cabbage, pepper, tomato. Pour in liquid.

Tip: Cabbage will collapse under heat.

Season with salt, pepper, bay leaf. Cook covered approx. 25-30 minutes until cabbage is soft.

Tip: Do not overcook completely, good if vegetable has a little bite.

Serve with sour cream and fresh bread.

Tip: Can acidify with a few drops of vinegar in the plate.
