Grate the gourd using a medium grater. Squeeze out excess water with your hands.

Tip: Removing water (osmosis) shortens cooking time and concentrates flavor.

Heat 2 tablespoons of ghee in a pan and sauté the grated gourd over medium heat until softened and most moisture evaporates (approx. 10-15 mins).

Tip: It shouldn't brown, just steam in its own juices and butter.

Pour in the milk. Cook with frequent stirring until the gourd absorbs the milk and the mixture thickens.

Tip: Sugars and proteins in the milk caramelize, giving 'halwa' its full flavor.

Add sugar, cardamom, and cinnamon. The mix will become liquid again from the sugar melting – don't panic, keep cooking!

Tip: Melting sugar releases water which must also be evaporated.

When the mass separates from the sides of the pan, stir in remaining ghee, toasted nuts, and rose water. Stir for 1-2 more minutes.

Tip: Adding fat at the end gives the dessert a glossy sheen.

You didn't cook it long enough. Patience is key: keep stirring until moisture evaporates and fat (ghee) starts separating at the edges.
The gourd tastes bitter.
Unfortunately, sometimes bottle gourd is naturally bitter. Taste a raw piece before grating! If bitter, discard it; it cannot be fixed.
