Braised Short Ribs (Galbi-jjim Style)

Galbi (or Kalbi) is the king of Korean BBQ, but this 'saucy' braised version (Galbi-jjim style) is the hero of weekdays. Soy sauce, brown sugar, and pungent ginger cook down into a thick, glossy glaze on the meat. Boneless short ribs (or fatty beef chuck) become buttery soft here not on a smoky grill, but in their own juices and marinade.

Instructions

1

Cut meat into 1.5 inch cubes. Finely slice onion, grate garlic and ginger.

Tip: Cut meat against grain for easier tenderizing and chewing.
2

Mix marinade: soy sauce, water, brown sugar, sesame oil, grated garlic, and ginger. Toss meat and onion in it, let stand for 30 minutes (or overnight).

Tip: Sugar and soy enzymes start tenderizing meat fibers during marinating, while salt penetrates inside (osmosis).
3

Heat deep skillet. Remove meat from marinade (reserve liquid!) and sear on all sides over high heat.

Tip: Sear, don't steam! Brown crust adds flavor. If it releases too much juice, cook in batches.
4

Pour reserved marinade and sliced chili over meat. Cover and simmer on low heat until meat is tender (approx. 30 mins). If liquid evaporates, add a little water.

Tip: Steam under lid tenderizes meat while sauce flavors concentrate.
5

Remove lid and boil off remaining water until sauce turns into thick, syrupy glaze on meat. Serve sprinkled with sesame seeds and cilantro.

Tip: Sugary sauce caramelizes quickly at the end and can burn, so stay alert and stir!

Recipe FAQ

Can I use other meat?
Yes, it's divine with chicken thigh fillets too, but cooking time is shorter (approx. 15-20 mins). Pork shoulder is also a good choice.
Sauce stayed too thin.
Remove meat and boil sauce on high heat for a few minutes until it thickens (reduction).
