Creamy Crab Pizza with Fresh Herbs

The biggest challenge with seafood pizza is timing. Crab meat is delicate; it dries out and becomes rubbery in seconds. That's why we add the crab either at the very end of baking or hide it under the cheese to steam gently rather than roast in direct heat.

Instructions

1

Prepare the dough and let it rise.

Tip: Leave a thicker rim when stretching the dough to hold the juicy toppings.
2

Stretch it out, spread with tomato sauce, and sprinkle with crushed garlic and mozzarella.

Tip: Garlic and tomato provide a classic Marinara base.
3

Distribute the crab meat over the top.

Tip: Since the recipe calls for cooked crab, gently press it into the cheese to prevent it from drying out.
4

Bake at 425°F (220°C) for 15-20 minutes.

Tip: Watch the crab: if it starts to shrink, the pizza is ready.
5

After baking, garnish with fresh parsley and drizzle with lemon juice.

Tip: Citric acid brightens the seafood flavors and adds freshness.

Recipe FAQ

Can I use imitation crab (surimi)?
Better not. Surimi is processed fish protein that may fall apart under heat. Use real shrimp or crayfish if crab isn't available.
The crab is raw, what should I do?
If using raw (gray) shrimp, add them at the beginning. If cooked (pink), add only during the last 2 minutes.
