Preheat oven to 350°F (180°C).
In a large bowl, toss together the oats, chopped walnuts, almonds, and salt until evenly mixed.
Whisk the melted coconut oil with the honey and vanilla extract in a small container.
Pour the honey mixture over the dry ingredients and mix thoroughly until every oat flake is coated and shiny.
Spread the mixture onto a baking sheet lined with parchment paper in a single, even layer.
Bake for 20-25 minutes. Stir gently halfway through (at about 12 minutes), then spread out again and continue baking until deep golden brown and fragrant.
Remove from oven and let cool COMPLETELY in the pan. Only add the dried cranberries after cooling.
Break into pieces and serve with yogurt or fresh fruit.
