Beat the egg whites into stiff peaks. Mix the yolks with the buttermilk/milk and melted butter.

Tip: Air bubbles in the egg whites make the batter extra light.

Mix the dry ingredients (flour, sugar, baking powder, soda, salt). Combine with the egg yolk mixture.

Tip: Do not overmix; a few lumps are fine, otherwise, it becomes rubbery (gluten development).

Gently fold the egg whites into the batter.

Tip: Use broad strokes so you don't deflate the foam.

Heat the pan over medium heat and place a little butter in each well. Fill wells about 3/4 full with batter.

Tip: If the pan is too hot, the outside burns while the inside stays raw.

When the bottom forms a crust, place a dot of chocolate in the center, then use a skewer to turn it 90 degrees. Add a little more batter if needed, and keep turning until the sphere closes.

Tip: The turning technique takes practice: the still-runny batter flows down to form the sphere.

I don't have the special pan.
Unfortunately, the spherical shape requires it. You can use a waffle iron; the taste will be the same, but the shape won't.
When do I turn them?
When the edges are solid but the center is still runny. The runny batter flows out to fill the other half of the sphere.
