Proof the yeast: Mix the sugar and yeast into the lukewarm water. Let it sit for 5-10 minutes until a frothy layer forms on top.
In a large bowl, whisk the flour and salt together. Pour in the yeast mixture and the olive oil.
Knead the dough by hand or with a stand mixer for about 8-10 minutes until smooth, elastic, and pulling away from the sides of the bowl.
Cover the bowl with a kitchen towel and let it rise in a warm place for about 45-60 minutes, or until doubled in size.
Meanwhile, slice the mushrooms and pepper thinly. Preheat your oven to the highest possible setting (min. 425°F, preferably 480°F).
