A gem of Kashmiri cuisine. Unlike spicy Indian dishes, this one is mild, aromatic, and slightly sweet. Basmati rice is not just a side here, but the star: cooked in milk or spiced water, and richly garnished with roasted nuts and dried fruits. The scent of cinnamon and cardamom creates an instant festive atmosphere.

Wash the rice gently until the water runs clear. Soak for 20 minutes, then drain.
Tip: Basmati grains are long and fragile. Washing removes surface starch, making it fluffy.

Fry the thinly sliced onion in fat until dark brown (but not burnt!), then remove. Fry the almonds and raisins in the same fat, then remove.
Tip: Caramelized onion (birista) provides the dish's sweet base flavor.

Add spices (cinnamon, cloves, cardamom) to the remaining oil. Sauté for 30 seconds.
Tip: Essential oils dissolve into the oil.
