Wash the rice gently until the water runs clear. Soak for 20 minutes, then drain.

Tip: Basmati grains are long and fragile. Washing removes surface starch, making it fluffy.

Fry the thinly sliced onion in fat until dark brown (but not burnt!), then remove. Fry the almonds and raisins in the same fat, then remove.

Tip: Caramelized onion (birista) provides the dish's sweet base flavor.

Add spices (cinnamon, cloves, cardamom) to the remaining oil. Sauté for 30 seconds.

Tip: Essential oils dissolve into the oil.

Add diced carrot and rice. Stir gently to coat grains in oil.

Tip: The fat coating helps prevent grains from sticking together.

Pour in the water, add salt. Bring to a boil, then reduce heat to low, cover, and cook for 10-12 minutes until water is absorbed.

Tip: Do not stir while cooking, or you will break the rice!

Remove from heat, keep covered for 5 minutes. Fluff with a fork and mix in the fried onions, almonds, raisins, and cilantro.
