Homemade kefir making is an ancient method of preserving milk. Kefir grains (which are actually not grains, but a community of bacteria and yeast living in a polysaccharide matrix) transform milk into a thick, creamy, tart drink. Supplemented with blueberries (bilberry), not only does the color become deep purple, but the flavonoid content multiplies, creating a true 'superfood' drink.

Place the kefir grains in a clean jar and pour the room temperature milk over them. (If fridge cold, it starts slower).

Tip: Grains are living things; too cold shocks them, too hot kills them.

Cover with a cloth (to breathe, but keep bugs out) and let stand in a dark place for 24-36 hours until the milk thickens and smells tart.

Tip: You will see whey starting to separate at the bottom – this indicates it's ready.

Strain the finished kefir through a plastic strainer. Set aside the remaining grains for the next batch.

Tip: Metal tools can react with the acidic environment and the grains.

Pour the strained kefir into a blender, add the washed blueberries and honey. Blend until smooth and purple.

Tip: The pigments in blueberry skin become truly vibrant in an acidic environment.

Chill for a few hours before consuming.

Tip: Freshly blended kefir has many bubbles; under refrigeration, it settles and becomes creamy.

Recipe FAQ

Why can't I use UHT milk?
The structure of shelf-stable milk has changed due to heat treatment; kefir grains have a harder time processing it. Fresh, pasteurized (or boiled raw) milk is best.
What do I do with the grains?
After straining, rinse them (optional) and put them in fresh milk. They will grow continuously!
