Aebelskiver (Danish Pancake Balls)

Aebelskiver is more than just a pancake; it's the edible embodiment of Danish 'hygge'. Legend says Vikings cooked these on their dented shields over campfires. The secret to the perfect sphere is a special pan and a quick wrist: turning the batter while cooking allows the liquid center to flow out and create the other half of the ball, resulting in a treat that's crisp outside and airy inside like a donut, but without deep frying.

Instructions

1

Separate the eggs. Beat the whites to stiff peaks in a clean bowl.

Tip: The air bubbles in the egg whites make the pancakes extra light and spongy.
2

Whisk the yolks with sugar, then add milk, melted butter, vanilla, and lemon zest.

Tip: Lemon zest cuts through the sweetness and adds freshness.
3

In another bowl, sift flour, baking powder, and salt. Fold in the milk-egg mixture just until the flour disappears.

Tip: Do not overmix, or the gluten will toughen the pancakes.
4

Gently fold the egg whites into the batter, being careful not to deflate them.

Tip: Use large, sweeping motions.
5

Heat the Aebelskiver pan over medium heat and brush each well with butter.

Tip: Ready when the butter sizzles but doesn't burn.
6

Fill wells 3/4 full. When the edges set (1-2 mins), use a skewer to rotate the ball 90 degrees.

Tip: Batter will spill into the bottom of the well, creating the other half of the sphere.
7

Continue rotating until perfectly round and golden brown on all sides.

Tip: Multiple turns ensure the center cooks through.
8

Serve immediately with powdered sugar and jam.

Tip: Best eaten hot and steamy.

Recipe FAQ

I don't have an Aebelskiver pan.
Unfortunately, the pan defines this dish. You can use a cake pop maker, but in a flat skillet, it's just a pancake.
Why is it flat?
You turned it too early or too late. Turn when the shell holds but the inside is still liquid enough to flow out and form the new side.
