Heat 1 tbsp ghee in a small pan. Roast cashews until golden brown, then add raisins. When raisins puff up, remove and set aside.

Tip: Raisins can burst if fried too long; just until rounded.

In the same pan with remaining ghee, toast the flattened rice (Aval) for 1-2 mins until fragrant and slightly color-changed.

Tip: Toasting helps the flakes hold shape in milk rather than disintegrating.

Bring milk to boil in the pot. Once boiling, add toasted rice flakes. Cook on medium heat approx 10 mins until flakes are soft and milk slightly thickens.

Tip: Milk loses water (evaporation), concentrating flavor.

Add sugar and crushed cardamom seeds (no husks). Stir until sugar dissolves.

Tip: Always add sugar at the end; adding it early makes rice harder to soften.
