Crispy Banana Spring Rolls (Turon)

Peel the bananas. Cut them in half crosswise, then lengthwise, to get finger-thick sticks.
Mix the brown sugar with the cinnamon on a flat plate. Roll the banana sticks in the sugar until fully coated.
Wrapping: Lay a wrapper flat. Place a sugared banana piece on it and sprinkle with a pinch of coconut. Fold the bottom up, fold in the sides (like an envelope), and roll up tightly. Seal the edge with a drop of water.
Frying: Heat the oil. Before adding the rolls, you can sprinkle a little sugar directly into the hot oil (careful not to burn it), then fry the rolls until golden brown. This glazes the outside.
Drain on a wire rack (not paper towels, or the caramel will stick!) and let cool for a few minutes.
