What if I don't have a special pan?
Unfortunately, it's essential for the true spherical shape. In a pinch, you can fry small, puffy pancakes in a regular pan; the taste will be the same, just the shape different.
Why is the center raw?
The pan was too hot, so the outside burned before the heat could reach the center. Cook on lower heat!
