- What spruce can I use?
- Use ONLY young, light green spring tips of Spruce or Pine. Yew is poisonous, strictly avoid it!
- Why sterilize bottles?
- So only 'good' yeast multiplies and the drink doesn't spoil from unwanted bacteria.
- Can it be non-alcoholic?
- If you leave it only 1-2 days, it will have negligible alcohol, more like a soda, but full fermentation produces alcohol.

This drink evokes the cool, clean air of Scandinavian forests. Foraging is traditional in the region, so using tender spruce tips is a natural way to flavor food and drink. The resinous, citrusy notes of spruce harmonize surprisingly well with apple sweetness, resulting in a truly refreshing, slightly sparkling drink.

Pour out a little apple juice, warm it up, and dissolve sugar in it. Pour back into the rest of the juice in a large, clean vessel.
Tip: Sugar provides food for yeast, which converts it to alcohol and bubbles (fermentation).

Thoroughly wash spruce tips and lemon peel, then add them to apple juice with cinnamon.
Tip: Waxy layer of spruce tips might contain wild yeast, but for safety we use controlled fermentation with added yeast.

Sprinkle yeast on top, let rest 10 mins, then stir thoroughly.
Tip: Yeast needs time to 'wake up' and rehydrate before getting to work.

Cover vessel with clean cloth and secure with rubber band. Place in dark, room temp spot for 7-10 days.
Tip: Cloth allows gases to escape but protects drink from dust/flies. If sealed tight, vessel could explode from pressure.

Taste daily from day 5. When not too sweet and you feel fizz, filter through thick cheesecloth.
Tip: During fermentation sugar turns to alcohol, so drink becomes drier (less sweet).

Tip: Cold slows down yeast, 'putting them to sleep', allowing flavors to meld and settle (sedimentation).
