Peel garlic and slice chilies.

Simmer garlic and chili in oil on very low heat (confit) for 15 mins until soft.

Tip: Do not burn! We want soft, sweet garlic, not fried.

Mash with a fork or blend. Season with lemon and salt.

Tip: Lemon cuts the oiliness.
