  • Large Food-Grade Bucket or Bowl: You need a non-reactive vessel (plastic or glass, not aluminum) because the citric acid can react with metals, giving the syrup a metallic taste.
  • Muslin Cloth or Cheesecloth: Essential for straining. Coffee filters are too fine and will clog; a metal sieve is too coarse and lets bugs/pollen clumps through.
  • Sterilized Glass Bottles: To prevent fermentation or mold during storage.

Inspect flowers. Do NOT wash.

Tip: The flavor is in the yellow pollen. Washing the flowers rinses away the flavor. Remove bugs by shaking gently or leaving them on a white cloth for an hour.

Create syrup, cool to room temp, add acid.

Tip: Temperature is critical. Pouring boiling syrup over the flowers destroys the delicate floral notes, resulting in a 'stewed grass' flavor.

Tip: Use a muslin cloth to strain. Squeezing the lemons into the mix at the end adds extra pectin and zest, but can make the syrup cloudy.
