Pour the cold wine into the glass.

Tip: This ratio (2:1 wine to water) is the 'Nagyfröccs' (Large Spritzer). The wine dominates.

Spray the soda water in with a strong stream.

Tip: The high pressure mixes the drink, so you don't need to stir (which kills bubbles).

Drink immediately while fizzy.

Tip: CO2 solubility is best in cold liquid. If warm, the gas escapes instantly.

Can I use mineral water?
In an emergency, yes, but a real spritzer uses 'prickly', high-pressure soda water. Mineral water bubbles are too fine and dissipate quickly.
