Silky Minted Green Pea Sauce

The natural sweetness of green peas and the coolness of mint are a classic pairing, especially in Anglo-Saxon cuisine. Thanks to puréeing, this sauce becomes silky, rich from the cream, and glossy from the butter. It's an excellent way to elevate simple peas into an elegant side dish or sauce.

Instructions

1

Finely mince the shallot and garlic.

Tip: Shallots have a more delicate, sweeter flavor than regular onions, pairing better with the peas.
2

Melt the butter in a saucepan over medium heat. Add the shallot and sweat until translucent (do not brown!). Add the garlic in the last minute.

Tip: If the onion browns, it changes the sauce's color and flavor profile. The goal is to 'sweat' them, not fry.
3

Add the green peas, toss to coat in the butter, then pour in the vegetable stock.

Tip: Coating the peas in butter first adds richness.
4

Cover and simmer until the peas are tender (approx. 5-8 minutes). Taste to test; the skins should be soft.

Tip: Don't overcook them to a greyish-green! Keep them vibrant.
5

Pour in the cream, bring to a simmer for one minute, then remove from heat. Stir in the fresh mint.

Tip: Do not cook the mint; just let the residual heat wilt it to keep the flavor fresh.
6

Puree with an immersion blender until completely smooth. Season with salt and pepper.

Tip: Tilt the pot so the blender head is fully submerged for a creamier texture.
7

For a truly elegant texture, pass the sauce through a fine-mesh sieve (optional).

Tip: This removes the pea skins, resulting in a restaurant-quality 'velouté' style sauce.

Recipe FAQ

Can I use canned peas?
Not recommended. Canned peas have a dull color and a 'cooked' flavor. Frozen peas taste much fresher and retain a vibrant color.
It turned out too thick.
Add a splash more vegetable stock or cream to thin it out.
