- Can I use Jasmine rice?
- No. Jasmine rice will fall apart. Only 'Glutinous' or 'Sweet Rice' works.
- Why do I need to soak it?
- Because we steam it, not boil it. The water needs to penetrate the grains beforehand.
Thai Mango Sticky Rice (Khao Niao Mamuang)
The queen of Thai desserts. 'Glutinous rice' is a special type of rice with high starch content that makes it stick together. The combination of salty-sweet coconut sauce and acidic mango is perfection. Note: This is not rice pudding; it must be steamed, not boiled!

Instructions
1
✓
Rinse rice in cold water until water runs clear (5-6 times), then soak for at least 4 hours (or overnight).
Tip: Washing removes surface starch so grains aren't slimy, just sticky.
2
✓
Drain rice and place in a steamer lined with cheesecloth. Steam covered for 25-30 minutes until soft and translucent.
Tip: Steaming cooks the grains gently without waterlogging them.
3
✓
Meanwhile, heat half (or 2/3) of the coconut milk with sugar and salt until dissolved. Do not boil!
Tip: The salt is essential! It highlights the sweetness of the coconut.
4
✓
Place hot rice in a bowl and pour the warm coconut sauce over it. Mix, cover, and let sit for 20 minutes.
Tip: The hot rice absorbs the liquid and swells.
5
✓
Season the remaining coconut milk with a pinch of salt/sugar and simmer until slightly thickened (this is the topping).
6
✓
Serve rice with sliced mango, drizzle with thickened sauce, and sprinkle with sesame seeds.
Tip: The crunchy seeds add texture to the soft bites.
