Hoisin means 'seafood' in Cantonese, which is ironic because the sauce (and most dishes made with it) contains no seafood. It is a thick, sweet and spicy glaze often called 'Chinese BBQ sauce'. The original version is made from fermented soybeans over a long period, but this homemade 'cheat' version with peanut butter brilliantly mimics that creamy, dense texture and nutty flavor profile.

In a cold saucepan (do not turn on heat yet!), whisk the peanut butter with the soy sauce, honey, and rice vinegar until smooth.

Tip: It is easier to mix peanut butter when cold; oil separates less.

Add the sesame oil, garlic powder, and chili flakes.

Tip: Garlic powder works better here than fresh, offering a smoother texture that won't burn in the thick sauce.

Dissolve the cornstarch completely in the cold water, then pour it into the saucepan with the other ingredients.

Tip: Always mix cornstarch with cold water!

Now place on the stove. Heat over medium heat, stirring continuously.

Tip: Don't leave it unattended; peanut butter and honey burn quickly.

As soon as it boils and thickens (a few minutes), turn it off.

Tip: It thickens much more as it cools, so it should be slightly runnier when hot than the desired final result.

Recipe FAQ
