This recipe is a fusion of tea and fruit juice. The tannins in black tea give structure, the apple juice provides fruity sweetness, and spices add depth. Boil the water, then let cool for 1 minute (to approx. 200°F). Steep the tea bag for 3-4 minutes. Remove the bag.

Tip: This is the 'base' tea. Don't make it too strong as it will concentrate further.

Meanwhile, peel the ginger and slice thinly.

Tip: Sliced ginger gives a cleaner, spicier flavor than grated and is easier to strain out.

In another saucepan, boil the apple juice with the cinnamon, cloves, nutmeg, and ginger. Simmer for 5-8 minutes.

Tip: This extracts the spice oils. The acidity of the apple juice helps.

Pour the prepared tea into the spiced apple juice. Heat together, but do not boil.

Tip: When the two liquids combine, flavors balance out.

Remove from heat. When cooled to drinkable temperature (approx. 140°F), stir in the honey and lemon juice.

Tip: Honey and lemon 'seal' the flavors.

Strain into glasses and serve with an apple slice.

Recipe FAQ

Why don't I boil the tea bag in the juice?
Because tea steeping time (3-5 min) and spice boiling time (10 min) differ. If you boil tea too long, it becomes unpalatably bitter.
What tea should I use?
A good quality Ceylon or English Breakfast is perfect. The bergamot oil in Earl Grey can also be exciting.
