Classic South African Beef Bobotie

Preheat oven to 350°F (180°C). Tear bread into pieces and soak in roughly 1/4 cup of the milk. Let sit until absorbed.
Finely chop onion. Heat oil in a skillet and sauté onion until golden. Add ground beef and cook until browned, breaking up clumps.
Add curry powder, salt, and pepper. Cook 1-2 minutes until fragrant, then remove from heat.
Mix the meat with the soaked (squeezed) bread, 1 beaten egg, apricot jam, vinegar, and raisins. Mix thoroughly.
Spread mixture evenly into an ovenproof dish. Press down slightly to flatten.
Whisk remaining 2 eggs with remaining 3/4 cup milk and a pinch of salt. Pour gently over the meat. Insert bay leaves vertically.
Bake for 30-40 minutes until golden brown and set. Let rest 10 minutes before slicing.
