Sift flour into a bowl; mix in yeast and sugar. Dissolve salt in the warm water.
Pour the salted water and olive oil into the flour mix. Knead for 10-15 minutes until elastic and smooth.
Place dough in a bowl, cover, and let rise at room temperature for about 60 minutes, or until doubled.
Grate the cheeses and fresh ginger. Mix them in a bowl with pepper, oregano, and basil.
Divide dough into 4 parts. On a floured surface, roll each into a circle about 1/8 inch thick.
Spread a thin layer of sauce on the bottom half of each circle (leave a 1-inch border). Pile on the ginger-cheese mix.
Fold the top half over the filling. Wet the edges slightly with water, then crimp tightly with a fork or roll the edges.
Place on a parchment-lined baking sheet, brush with beaten egg, and cut 2-3 small steam vents on top.
Bake in a preheated 425°F (220°C) oven for 18-20 minutes until deep golden brown.
