Lobio is Georgia's answer to chili beans, but meatless. This thick, spiced bean ragout is built on the trinity of cilantro, walnuts (often added), and garlic. Traditionally prepared in clay pots, it is cooked until some beans fall apart, naturally thickening the gravy.

Boil soaked beans in fresh water until tender (60-90 mins).

Tip: Don't salt early; it hardens skins.
